    • White flour (a.k.a. white cake flour) is lower in gluten than all-purpose flour and gives a lighter, airy texture to cakes. Bean flour (a.k.a. garbanzo bean flour or chickpea flour) is made from ground chickpeas. It’s a great vegan substitute for eggs because it has a taste similar to eggs and also binds ingredients together. I use garbanzo bean flour to make delicious vegan omelets.     • Yes, you can use Gluten free all purpose flour but you need to add in some other gluten free binding agent along with the flour to let your baked item stay up
